Tartine Cookbook-A pastry chef I used to work with recommended this to me and it has been a go-to cookbook; all the the recipes I've tried from it have been outstanding.
Martha Stewart's Pies & Tarts-My go-to book for recipes or inspiration when I want to bake a pie.
Radically Simple by Rozanne Gold-I love this book, consistently great recipes, all very easy to make.
Cupcakes from the Primrose Bakery-Good for basic cupcake recipes. I like that the recipes are for a dozen cupcakes and easy to double. Fun photography, too.
Chewy Gooey Crispy Crunchy Melt-In-Your-Mouth Cookies by Alice Medrich-I love that the book is separated by texture. Medrich offers some interesting flavor combinations as well as many gluten-free recipes
